CARROT AND PINEAPPLE SALAD - A crunchy warm salad (Serves 4)

Ingredients

  • 2 onions cut into thin slices
  • ½ teaspoon ginger, chopped
  • 2 garlic cloves, crushed
  • 2 cups carrots, peeled and thinly sliced
  • 1 cup pineapple cubes
  • ¼ cup fresh pineapple juice
  • 2 teaspoons oil

For the Garnish

  • ¼ teaspoons freshly ground black pepper
  • 1 teaspoon chopped parsley

Method

  • Heat the oil in a pan, add onions, ginger, garlic and stir for a few minutes
  • Add the carrots and stir fry for sometime
  • Add the pine apple cubes and juice and stir till the juice dries
  • Garnish and serve warm
