CARROT AND PINEAPPLE SALAD- A crunchy warm salad (Serves 4)
2 onions cut into thin slices
½ teaspoon ginger, chopped
2 garlic cloves, crushed
2 cups carrots, peeled and thinly sliced
1 cup pineapple cubes
¼ cup fresh pineapple juice
2 teaspoons oil
For the Garnish
¼ teaspoons freshly ground black pepper
1 teaspoon chopped parsley
Heat the oil in a pan, add onions, ginger, garlic and stir for a few minutes
Add the carrots and stir fry for sometime
Add the pine apple cubes and juice and stir till the juice dries
Garnish and serve warm
